Destiny’s Chicken Marinade

This is one of those recipes I come back to again and again, on busy days, slow weekends, or nights when I don’t want to overthink dinner. This marinade always works. It’s simple, reliable, and somehow makes every cut of chicken taste like you put in far more effort than you did.

It’s my go-to marinade, but also my go-to salad dressing. It’s so versatile, and a reminder that cooking at home doesn’t need to be complicated.

Ingredients

  • 4 chicken breasts, 8 chicken thighs, or 1 whole chicken

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • 1 tbsp Dijon mustard

  • 2 tsp herb salt

Instructions

  1. Mix the marinade together in a bowl and pour over the chicken in a freezer bag or shallow dish. Marinate for 2–24 hours — the longer it marinates, the better.

  2. If using a whole chicken, save the lemon rinds and place them inside the chicken while it cooks.

  3. Cook the chicken breasts or thighs on the BBQ or in a pan and enjoy with your favourite sides.
