Cookie Dough Bars

There are days you want cookies… but not the effort of scooping trays, waiting for batches, and doing a sink full of dishes after.

This recipe came from one of those afternoons. Craving something warm, chocolatey, and comforting, but still made with ingredients I feel good about.

So instead of making cookies, I spread the dough into a pan and baked it all at once.

The result?
Soft, chewy, oatmeal-style chocolate chip bars with crisp edges and a tender centre. Everything you want from a cookie, just simpler.

They’re naturally gluten-free, dairy-free, and refined sugar-free, but more importantly… they taste like a treat. Not a “healthy substitute.”

Because good food should still feel comforting.

Ingredients

  • 1 ripe banana

  • 3/4 cup nut butter

  • 1/4 cup olive oil

  • 1/3 cup maple syrup

  • 2 eggs

  • 1 tsp vanilla

  • 1 cup almond flour

  • 1/2 cup GF rolled oats

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2–1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F.

  2. Combine all wet ingredients in a bowl and mix until well combined.

  3. In the same bowl, add the almond flour, oats, salt, baking soda, and chocolate chips. Mix again until just combined.

  4. Line an 8×8 baking dish with parchment paper, then evenly spread the mixture into the prepared pan.

  5. Bake for 25–30 minutes.

  6. Remove from the oven and let cool in the pan for 5 minutes before transferring to a cooling rack.

  7. Enjoy!
